Crispy and flavorful chimichangas made with beef and beans, cooked to perfection in an air fryer for a healthier twist.
Ingredients
- 1 lb ground beef
- 1 can (16 oz) refried beans
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- 6 large flour tortillas
- 1 tbsp vegetable oil (for brushing)
Instructions
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Add taco seasoning and refried beans. Mix well and cook for 2-3 minutes.
- Spread the beef and bean mixture onto tortillas. Sprinkle cheese on top.
- Fold the tortillas tightly into burrito shapes.
- Brush each chimichanga lightly with vegetable oil.
- Preheat the air fryer to 375°F (190°C).
- Place chimichangas in the air fryer basket, leaving space between them.
- Cook for 8-10 minutes, flipping halfway, until golden and crispy.
- Serve hot with your favorite toppings.
Notes
- Use lean ground beef for less grease.
- Customize with toppings like sour cream, salsa, or guacamole.
- If tortillas crack when folding, warm them briefly in the microwave.
