Description
A creamy and flavorful soup made with celery root and apples, cooked quickly in an air fryer for a smooth texture and rich taste.
Ingredients
- 1 medium celery root, peeled and cubed
- 2 medium apples, peeled and chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups vegetable broth
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp nutmeg
- 1/2 cup heavy cream (optional)
Instructions
- Preheat your air fryer to 375°F (190°C).
- Toss celery root, apples, onion, and garlic with olive oil, salt, and pepper.
- Air fry for 15 minutes, shaking halfway through.
- Transfer to a blender with vegetable broth and nutmeg. Blend until smooth.
- Return to a pot, stir in heavy cream if using, and heat through.
- Serve warm.
Notes
- For a dairy-free version, omit heavy cream or use coconut milk.
- Adjust seasoning to taste.
- Store leftovers in the fridge for up to 3 days.
