A hearty and comforting soup made with ground beef, potatoes, and cheese, cooked in an air fryer for a quick and easy meal.
Ingredients
- 1 lb ground beef
- 4 cups diced potatoes
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
Instructions
- Preheat your air fryer to 375°F.
- Brown the ground beef in a skillet over medium heat, then drain excess fat.
- Add the onion and garlic to the skillet and cook until softened.
- Transfer the beef mixture to an air fryer-safe pot or baking dish.
- Add the diced potatoes, beef broth, salt, pepper, and paprika.
- Cook in the air fryer for 20 minutes, stirring halfway through.
- Stir in the heavy cream and shredded cheese until melted and well combined.
- Serve hot and enjoy.
Notes
- For a thicker soup, mash some of the potatoes before adding the cream and cheese.
- You can substitute ground turkey for a lighter version.
- Store leftovers in an airtight container in the fridge for up to 3 days.
