Description
Crispy and cheesy air fryer chicken quesadillas perfect for a quick meal.
Ingredients
- 2 large flour tortillas
- 1 cup cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup diced bell peppers
- 1/4 cup diced onions
- 1 tsp taco seasoning
- 1 tbsp olive oil
- 1/4 cup salsa (optional)
- 1/4 cup sour cream (optional)
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a bowl, mix shredded chicken, bell peppers, onions, and taco seasoning.
- Place one tortilla on a flat surface. Sprinkle half the cheese evenly over it.
- Spread the chicken mixture over the cheese, then top with the remaining cheese.
- Place the second tortilla on top and press lightly.
- Brush the top tortilla with olive oil.
- Carefully transfer the quesadilla to the air fryer basket.
- Cook for 4-5 minutes, flip, and cook for another 3-4 minutes until golden and crispy.
- Remove, slice, and serve with salsa and sour cream if desired.
Notes
- Use pre-cooked chicken for faster prep.
- Customize fillings with beans, corn, or jalapeños.
- For extra crispiness, spray the tortilla lightly with cooking oil.
