Description
A creamy and comforting bisque made with butternut squash and beans, cooked quickly in an air fryer for a perfect Christmas meal.
Ingredients
- 2 cups diced butternut squash
- 1 can (15 oz) white beans, drained and rinsed
- 1 small onion, chopped
- 2 cloves garlic, minced
- 3 cups vegetable broth
- 1/2 cup coconut milk
- 1 tbsp olive oil
- 1 tsp smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your air fryer to 375°F (190°C).
- Toss butternut squash, onion, and garlic with olive oil.
- Air fry for 15 minutes, shaking halfway.
- Transfer vegetables to a blender.
- Add beans, vegetable broth, coconut milk, smoked paprika, salt, and pepper.
- Blend until smooth.
- Pour into a pot and heat for 5 minutes.
- Garnish with fresh parsley.
Notes
- Use canned butternut squash for quicker prep.
- Adjust seasoning to your taste.
- Store leftovers in an airtight container for up to 3 days.
