A quick and flavorful shrimp bowl with a smoky chipotle kick, perfect for a festive Christmas meal.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 2 tbsp chipotle in adobo sauce, minced
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- 1 lime, cut into wedges
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a bowl, mix shrimp, olive oil, chipotle, garlic powder, smoked paprika, salt, and pepper.
- Place shrimp in the air fryer basket in a single layer. Cook for 5-7 minutes until pink and opaque.
- Assemble bowls with rice, black beans, shrimp, avocado, and cilantro.
- Squeeze lime juice over the top before serving.
Notes
- For extra heat, add more chipotle in adobo sauce.
- Swap shrimp for chicken if preferred.
- Use quinoa instead of rice for a lower-carb option.
