Ingredients
- 1 whole chicken (about 3-4 lbs)
- 4 cups water
- 1 lemon, sliced
- 1 orange, sliced
- 2 cloves garlic, crushed
- 1 onion, chopped
- 1 tsp black peppercorns
- 1 tsp salt
- 2 sprigs fresh thyme
Instructions
- Place the chicken in a large pot and add water.
- Add the lemon, orange, garlic, onion, peppercorns, salt, and thyme.
- Bring to a boil, then reduce heat to simmer for 1.5 hours.
- Skim off any foam that rises to the top.
- Strain the broth and discard the solids.
- Serve hot or store for later use.
