Description
A fresh and flavorful pasta salad made in the air fryer, perfect for Christmas gatherings. Quick, easy, and packed with vibrant ingredients.
Ingredients
- 2 cups uncooked pasta (penne or fusilli)
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup black olives, sliced
- 1/4 cup feta cheese, crumbled
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions, then drain and let cool.
- Preheat the air fryer to 350°F (175°C).
- In a bowl, mix the cooked pasta, cherry tomatoes, cucumber, red onion, and black olives.
- Drizzle with olive oil and lemon juice, then sprinkle with oregano, salt, and pepper. Toss well.
- Transfer the mixture to the air fryer basket and cook for 5 minutes, shaking once halfway.
- Remove from the air fryer, top with feta cheese, and serve chilled or at room temperature.
Notes
- For a protein boost, add grilled chicken or shrimp.
- Store leftovers in an airtight container for up to 2 days.
