Description
A quick and flavorful air fryer dish featuring sweet chili chicken and mushrooms served with a refreshing cucumber crunch.
Ingredients
- 2 boneless, skinless chicken breasts, cut into strips
- 1 cup mushrooms, sliced
- 1/4 cup sweet chili sauce
- 1 tbsp soy sauce
- 1 tbsp olive oil
- 1 cucumber, thinly sliced
- 1/4 cup red onion, thinly sliced
- 1 tbsp rice vinegar
- 1 tsp sesame seeds
- Salt and pepper to taste
Instructions
- Preheat air fryer to 375°F (190°C).
- Toss chicken strips with sweet chili sauce, soy sauce, and olive oil.
- Add mushrooms to the chicken and mix well.
- Place the chicken and mushrooms in the air fryer basket. Cook for 12-15 minutes, shaking halfway.
- While cooking, combine cucumber, red onion, rice vinegar, and sesame seeds in a bowl.
- Serve the chicken and mushrooms over rice, topped with the cucumber crunch.
Notes
- Adjust sweet chili sauce to your preferred spice level.
- For extra crispiness, air fry for an additional 2-3 minutes.
