Description
A quick and flavorful Thai curry vegetable soup made in an air fryer, perfect for Christmas.
Ingredients
- 1 tbsp coconut oil
- 1 tbsp Thai red curry paste
- 1 can (400ml) coconut milk
- 2 cups vegetable broth
- 1 cup mixed vegetables (carrots, bell peppers, broccoli)
- 1 tbsp soy sauce
- 1 tsp brown sugar
- 1 lime, juiced
- Fresh cilantro for garnish
Instructions
- Preheat your air fryer to 350°F (175°C).
- In a bowl, mix coconut oil and Thai red curry paste.
- Add coconut milk, vegetable broth, mixed vegetables, soy sauce, and brown sugar. Stir well.
- Transfer the mixture to an air fryer-safe pot or baking dish.
- Cook for 15 minutes, stirring halfway.
- Add lime juice and garnish with fresh cilantro before serving.
Notes
- Adjust spice level by adding more or less curry paste.
- Use fresh vegetables for best results.
- Serve hot with rice or noodles.
