Description

A Whole30-compliant Cobb salad bowl made in an air fryer, perfect for a healthy Christmas meal.


Ingredients

  • 2 cups mixed greens
  • 1 cooked chicken breast, diced
  • 2 hard-boiled eggs, sliced
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 slices compliant bacon, cooked and crumbled
  • 1 tbsp olive oil
  • 1 tsp apple cider vinegar
  • Salt and pepper to taste


Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Toss diced chicken breast with olive oil, salt, and pepper.
  3. Air fry chicken for 8-10 minutes until cooked through.
  4. Assemble mixed greens in a bowl.
  5. Top with chicken, eggs, avocado, tomatoes, red onion, and bacon.
  6. Drizzle with apple cider vinegar.
