Description
A Whole30-compliant Cobb salad bowl made in an air fryer, perfect for a healthy Christmas meal.
Ingredients
- 2 cups mixed greens
- 1 cooked chicken breast, diced
- 2 hard-boiled eggs, sliced
- 1 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 2 slices compliant bacon, cooked and crumbled
- 1 tbsp olive oil
- 1 tsp apple cider vinegar
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 375°F (190°C).
- Toss diced chicken breast with olive oil, salt, and pepper.
- Air fry chicken for 8-10 minutes until cooked through.
- Assemble mixed greens in a bowl.
- Top with chicken, eggs, avocado, tomatoes, red onion, and bacon.
- Drizzle with apple cider vinegar.
- Toss lightly and serve immediately.
