Description

A refreshing cold pasta salad made with crispy air-fried gnocchi, fresh vegetables, and a light dressing.


Ingredients

  • 1 lb gnocchi
  • 1 tbsp olive oil
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp fresh basil, chopped
  • 2 tbsp lemon juice
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste


Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. Toss gnocchi with olive oil and air fry for 8-10 minutes until crispy.
  3. Let gnocchi cool completely.
  4. In a large bowl, combine tomatoes, cucumber, red onion, olives, and feta.
  5. Add cooled gnocchi to the bowl.
  6. Drizzle with lemon juice and balsamic vinegar.
  7. Sprinkle fresh basil, salt, and pepper.
  8. Toss gently and serve chilled.
