Description
A quick and healthy eggplant pizza with an Asian-inspired glaze, made in an air fryer.
Ingredients
- 1 medium eggplant, sliced into rounds
- 1 tbsp olive oil
- 1/2 cup tomato sauce
- 1/2 cup shredded mozzarella cheese
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tsp sesame seeds
- 1/4 tsp red pepper flakes
- 1 green onion, chopped
Instructions
- Preheat air fryer to 375°F (190°C).
- Brush eggplant slices with olive oil and place in the air fryer basket.
- Cook for 5 minutes, then flip and cook for another 3 minutes.
- Mix soy sauce and honey in a small bowl.
- Spread tomato sauce over each eggplant slice.
- Sprinkle mozzarella cheese on top.
- Drizzle with the soy-honey glaze.
- Air fry for 2-3 minutes until cheese melts.
- Garnish with sesame seeds, red pepper flakes, and green onion.
Notes
- Use firm eggplant for best results.
- Adjust glaze sweetness by adding more honey if needed.
- Serve immediately for crispy texture.
