A quick and easy keto-friendly grilled cheese made with air fryer bread. Perfect for a low-carb diet.


Ingredients

  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 2 tbsp melted butter
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup shredded mozzarella cheese
  • 1 tbsp olive oil (for brushing)


Instructions

  1. Preheat air fryer to 350°F (175°C).
  2. Mix almond flour, coconut flour, baking powder, and salt in a bowl.
  3. Add eggs and melted butter, then stir until combined.
  4. Fold in shredded cheeses.
  5. Shape dough into two small bread slices.
  6. Brush with olive oil and place in the air fryer basket.
  7. Cook for 8-10 minutes until golden brown.
  8. Let cool slightly, then assemble with additional cheese for grilled cheese.
  9. Return to air fryer for 2-3 minutes until cheese melts.
  10. Serve warm.
