A quick and easy keto-friendly grilled cheese made with air fryer bread. Perfect for a low-carb diet.
Ingredients
- 1 cup almond flour
- 2 tbsp coconut flour
- 1 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 2 tbsp melted butter
- 1/4 cup shredded cheddar cheese
- 1/4 cup shredded mozzarella cheese
- 1 tbsp olive oil (for brushing)
Instructions
- Preheat air fryer to 350°F (175°C).
- Mix almond flour, coconut flour, baking powder, and salt in a bowl.
- Add eggs and melted butter, then stir until combined.
- Fold in shredded cheeses.
- Shape dough into two small bread slices.
- Brush with olive oil and place in the air fryer basket.
- Cook for 8-10 minutes until golden brown.
- Let cool slightly, then assemble with additional cheese for grilled cheese.
- Return to air fryer for 2-3 minutes until cheese melts.
- Serve warm.
Notes
- Store leftover bread in an airtight container for up to 3 days.
- For extra crispiness, toast bread before making grilled cheese.
