Ingredients

  • 1 large eggplant, sliced into 1/2-inch rounds
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 eggs, beaten
  • 1 tablespoon olive oil


Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper.
  3. Dip each eggplant slice in beaten eggs, then coat with the breadcrumb mixture.
  4. Place the coated eggplant slices in the air fryer basket in a single layer.
  5. Lightly spray or brush with olive oil.
  6. Air fry for 8-10 minutes, flipping halfway, until golden and crispy.
  7. Top each slice with marinara sauce and mozzarella cheese.
  8. Air fry for another 2-3 minutes until the cheese melts.
  9. Serve hot.
