Description

A hearty and immune-boosting soup made with root vegetables and fire cider, perfect for cold weather or fighting off a cold. Cooked in an air fryer for a quick and easy meal.


Ingredients

  • 1 cup chopped carrots
  • 1 cup chopped parsnips
  • 1 cup chopped sweet potatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 2 tbsp fire cider
  • 4 cups vegetable broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme


Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Toss the chopped carrots, parsnips, sweet potatoes, onion, and garlic with olive oil, salt, and pepper.
  3. Place the vegetables in the air fryer basket and cook for 15 minutes, shaking halfway through.
  4. Transfer the roasted vegetables to a pot and add vegetable broth, fire cider, and thyme.
  5. Bring to a simmer and cook for 10 minutes.
  6. Blend half the soup for a creamy texture or leave it chunky.
  7. Serve hot.
