Description

Easy-to-make burritos prepped in advance and cooked in an air fryer for a quick meal.


Ingredients

  • 4 large flour tortillas
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheese
  • 1/2 cup diced tomatoes
  • 1/2 cup chopped onions
  • 1/2 cup cooked chicken, shredded (optional)
  • 1 tsp taco seasoning
  • 1 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Lay out a tortilla on a flat surface.
  2. Spread a layer of rice, beans, cheese, tomatoes, onions, and chicken (if using) evenly on the tortilla.
  3. Sprinkle taco seasoning, salt, and pepper over the filling.
  4. Fold the sides of the tortilla inward and roll it tightly into a burrito.
  5. Brush the outside of the burrito lightly with olive oil.
  6. Repeat for the remaining tortillas and ingredients.
  7. Place burritos in the air fryer basket, seam side down.
  8. Cook at 375°F for 8-10 minutes, flipping halfway, until golden and crispy.
  9. Serve hot with salsa or sour cream.

Notes

  • Wrap burritos individually in foil or parchment before freezing for later use.
  • Thaw frozen burritos before air frying, or add 2-3 extra minutes to cooking time.
