Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 lemon (juiced and zested)
  • 2 cloves garlic (minced)
  • 1 onion (diced)
  • 2 carrots (diced)
  • 2 celery stalks (diced)
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1/4 cup fresh parsley (chopped)


Instructions

  1. Preheat air fryer to 375°F.
  2. Season chicken with salt, pepper, and oregano. Air fry for 12-15 minutes until cooked. Shred.
  3. In a pot, sauté onion, garlic, carrots, and celery in olive oil for 5 minutes.
  4. Add chicken broth, orzo, and lemon zest. Simmer for 10 minutes.
  5. Stir in shredded chicken and lemon juice. Cook for 5 more minutes.
  6. Garnish with fresh parsley before serving.
