Description
A quick and easy soup combining ground beef, noodles, and vegetables cooked in an air fryer for a rich flavor.
Ingredients
- 1 lb ground beef
- 4 cups beef broth
- 2 cups egg noodles
- 1 cup diced carrots
- 1 cup diced celery
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
Instructions
- Preheat air fryer to 375°F.
- In a bowl, mix ground beef, salt, and pepper. Shape into small meatballs.
- Place meatballs in the air fryer basket and cook for 8 minutes, shaking halfway.
- In a pot, heat olive oil and sauté onion, garlic, carrots, and celery for 5 minutes.
- Add broth, thyme, and cooked meatballs. Simmer for 10 minutes.
- Stir in egg noodles and cook for another 8 minutes until tender.
- Serve hot.
Notes
- For a thicker soup, add 1 tbsp of cornstarch mixed with water.
- Swap ground beef for ground turkey if preferred.
- Store leftovers in the fridge for up to 3 days.
