Ingredients
- 1 lb ground chicken
- 1/2 cup grated zucchini
- 1/2 cup grated carrot
- 1/4 cup breadcrumbs
- 1 egg
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup panko breadcrumbs (for coating)
Instructions
- Preheat air fryer to 375°F (190°C)
- Mix ground chicken, grated veggies, breadcrumbs, egg, and seasonings in a bowl
- Shape mixture into nugget-sized pieces
- Coat each nugget with panko breadcrumbs
- Place nuggets in air fryer basket in single layer
- Cook for 10 minutes, flip halfway through
- Check internal temperature reaches 165°F (74°C)

- Squeeze excess moisture from grated veggies before mixing
- Use parchment liner for easier cleanup
