Description

Make crispy chicken nuggets packed with hidden veggies using your air fryer. A kid-friendly meal that’s healthier than fast food.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup grated zucchini
  • 1/2 cup grated carrot
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup panko breadcrumbs (for coating)


Instructions

  1. Preheat air fryer to 375°F (190°C)
  2. Mix ground chicken, grated veggies, breadcrumbs, egg, and seasonings in a bowl
  3. Shape mixture into nugget-sized pieces
  4. Coat each nugget with panko breadcrumbs
  5. Place nuggets in air fryer basket in single layer
  6. Cook for 10 minutes, flip halfway through
  7. Check internal temperature reaches 165°F (74°C)
