Description
Crispy chicken bites glazed with honey-garlic sauce served with veggie fried rice. A quick and flavorful meal.
Ingredients
- 1 lb chicken breast, cut into bite-sized pieces
- 2 tbsp soy sauce
- 1 tbsp honey
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tbsp olive oil
- 2 cups cooked rice
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 1 egg, beaten
- 1 tbsp sesame oil
- Salt and pepper to taste
Instructions
- Preheat air fryer to 375°F.
- In a bowl, mix chicken with soy sauce, honey, garlic, and ginger. Let marinate for 10 minutes.
- Place chicken in the air fryer basket and cook for 12-15 minutes, shaking halfway.
- Heat olive oil in a pan. Add mixed vegetables and sauté for 3 minutes.
- Push vegetables to one side, pour beaten egg into the pan, and scramble.
- Add cooked rice and sesame oil. Stir-fry for 5 minutes.
- Season with salt and pepper.
- Serve chicken bites over fried rice.
Notes
- Use day-old rice for better texture.
- Adjust honey for sweetness preference.
- Add chili flakes for extra heat.
