Description

Crispy chicken bites glazed with honey-garlic sauce served with veggie fried rice. A quick and flavorful meal.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp olive oil
  • 2 cups cooked rice
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 1 egg, beaten
  • 1 tbsp sesame oil
  • Salt and pepper to taste


Instructions

  1. Preheat air fryer to 375°F.
  2. In a bowl, mix chicken with soy sauce, honey, garlic, and ginger. Let marinate for 10 minutes.
  3. Place chicken in the air fryer basket and cook for 12-15 minutes, shaking halfway.
  4. Heat olive oil in a pan. Add mixed vegetables and sauté for 3 minutes.
  5. Push vegetables to one side, pour beaten egg into the pan, and scramble.
  6. Add cooked rice and sesame oil. Stir-fry for 5 minutes.
  7. Season with salt and pepper.
  8. Serve chicken bites over fried rice.

  • Use day-old rice for better texture.
  • Adjust honey for sweetness preference.
