A quick and easy salad using leftover turkey from your holiday meals, prepared in an air fryer for a crispy texture.
Ingredients
- 2 cups leftover turkey, shredded
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons balsamic vinaigrette
Instructions
- Preheat your air fryer to 375°F (190°C).
- Toss the shredded turkey with olive oil, salt, black pepper, and garlic powder.
- Place the turkey in the air fryer basket and cook for 5-7 minutes until crispy.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.
- Add the crispy turkey and crumbled feta cheese to the salad.
- Drizzle with balsamic vinaigrette and toss gently.
- Serve immediately.
