Description

Crispy and flavorful lentil and walnut meatballs made in an air fryer. A healthy, plant-based alternative to traditional meatballs.


Ingredients

  • 1 cup cooked lentils
  • 1/2 cup walnuts, finely chopped
  • 1/4 cup breadcrumbs
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp flaxseed meal mixed with 3 tbsp water (flax egg)


Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. In a mixing bowl, combine lentils, walnuts, breadcrumbs, onion, garlic, olive oil, oregano, salt, and pepper.
  3. Add the flax egg and mix until well combined.
  4. Shape the mixture into small meatballs (about 1-inch in diameter).
  5. Place the meatballs in the air fryer basket, leaving space between them.
  6. Air fry for 12-15 minutes, flipping halfway, until golden and crispy.
  7. Serve warm with your favorite sauce or dip.

Notes

  • For a gluten-free version, use gluten-free breadcrumbs.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat in the air fryer for 3-5 minutes to restore crispiness.
