Description

A low-carb version of classic lasagna made with eggplant slices instead of pasta, cooked in an air fryer for a crispy texture.


Ingredients

  • 1 large eggplant, sliced into 1/4-inch rounds
  • 1 lb ground beef or turkey
  • 1 cup marinara sauce (low sugar)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/2 cup ricotta cheese
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Cooking spray


Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. Lightly spray eggplant slices with cooking spray and season with salt and pepper.
  3. Air fry eggplant slices for 8-10 minutes, flipping halfway, until tender and slightly browned.
  4. In a skillet, brown the ground meat, then add marinara sauce, garlic powder, basil, and oregano.
  5. In a bowl, mix ricotta cheese, egg, and Parmesan cheese.
  6. Layer eggplant slices, meat sauce, and ricotta mixture in an air fryer-safe dish.
  7. Sprinkle mozzarella cheese on top.
  8. Air fry at 350°F (175°C) for 10-12 minutes until cheese is melted and bubbly.
  9. Let cool for 5 minutes before serving.

Notes

  • Pat eggplant dry before cooking to reduce moisture.
  • Use no-sugar-added marinara to keep it low carb.
  • For extra crispiness, broil for 2-3 minutes after air frying.
