Description

A delicious low-carb pizza made with zucchini crust and topped with pesto, cooked in an air fryer.


Ingredients

  • 2 medium zucchinis, grated
  • 1 egg
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup pesto
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup cherry tomatoes, sliced
  • 1 tbsp olive oil


Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. Squeeze excess moisture from grated zucchini using a clean towel.
  3. Mix zucchini, egg, almond flour, Parmesan, salt, and pepper in a bowl.
  4. Shape the mixture into a round crust on parchment paper.
  5. Brush crust with olive oil and air fry for 8 minutes.
  6. Flip the crust and air fry for another 5 minutes.
  7. Spread pesto on the crust and top with mozzarella and tomatoes.
  8. Air fry for 3-4 minutes until cheese melts.
  9. Slice and serve immediately.
