Ingredients

  • 2 white fish fillets (such as cod or tilapia)
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup kalamata olives, pitted
  • 1/4 cup crumbled feta cheese
  • 2 tbsp lemon juice
  • Fresh parsley for garnish


Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. Pat the fish fillets dry and rub with olive oil.
  3. Mix oregano, garlic powder, paprika, salt, and black pepper in a small bowl.
  4. Sprinkle the spice mix evenly over both sides of the fish.
  5. Place the fish in the air fryer basket and cook for 8-10 minutes until flaky.
  6. While the fish cooks, assemble bowls with quinoa, tomatoes, cucumber, red onion, and olives.
  7. Top each bowl with cooked fish, feta cheese, and a drizzle of lemon juice.
  8. Garnish with fresh parsley before serving.
