Description

A quick and easy air fryer Mexican rice recipe with bold flavors and perfect texture.


Ingredients

  • 1 cup long-grain white rice
  • 1 3/4 cups chicken or vegetable broth
  • 1 tbsp olive oil
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/4 cup tomato sauce
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 cup chopped cilantro


Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Preheat the air fryer to 350°F (175°C).
  3. Heat olive oil in a pan and sauté onion and garlic until soft.
  4. Add rice, tomato sauce, cumin, chili powder, and salt. Stir well.
  5. Transfer the mixture to an air fryer-safe dish and pour in the broth.
  6. Cover with foil and air fry for 20 minutes.
  7. Remove the foil, fluff the rice with a fork, and air fry for another 5 minutes.
  8. Stir in chopped cilantro before serving.

Notes

  • For spicier rice, add diced jalapeños.
