Description

A creamy and flavorful roasted red pepper soup made easily in an air fryer.


Ingredients

  • 4 large red bell peppers, halved and seeded
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups vegetable broth
  • 1/2 cup heavy cream (or coconut milk for dairy-free)
  • Fresh basil, for garnish


Instructions

  1. Preheat air fryer to 400°F (200°C).
  2. Toss bell peppers, onion, and garlic with olive oil, smoked paprika, salt, and pepper.
  3. Place in the air fryer basket and roast for 15 minutes, shaking halfway.
  4. Transfer roasted vegetables to a blender. Add vegetable broth and blend until smooth.
  5. Pour mixture into a pot, stir in heavy cream, and simmer for 5 minutes.
  6. Garnish with fresh basil before serving.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • For a thinner consistency, add more vegetable broth.
