Description
A quick and flavorful one-pan meal with southwest spices, ground beef, and sweet potatoes, all cooked in an air fryer for easy cleanup.
Ingredients
- 1 lb lean ground beef
- 1 large sweet potato, diced
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese
- 2 tbsp chopped fresh cilantro
Instructions
- Preheat air fryer to 375°F.
- Toss diced sweet potato with olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Air fry sweet potatoes for 10 minutes, shaking halfway.
- Add ground beef to the air fryer basket, breaking it into small pieces.
- Cook for another 8-10 minutes until beef is browned and sweet potatoes are tender.
- Sprinkle with cheese and cook 1 more minute to melt.
- Garnish with fresh cilantro before serving.
Notes
- For spicier flavor, add diced jalapeños or cayenne pepper.
- Use ground turkey or chicken for a leaner option.
- Store leftovers in an airtight container for up to 3 days.
