Crispy and delicious air fryer spinach artichoke zucchini bites, perfect for a healthy snack or appetizer.
Ingredients
- 1 cup spinach, chopped
- 1/2 cup artichoke hearts, chopped
- 1 medium zucchini, grated
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray
Instructions
- Preheat air fryer to 375°F (190°C).
- In a bowl, mix spinach, artichoke hearts, zucchini, breadcrumbs, Parmesan cheese, egg, garlic powder, salt, and pepper.
- Form mixture into small balls or patties.
- Lightly spray air fryer basket with cooking spray.
- Place bites in the air fryer basket, leaving space between them.
- Cook for 8-10 minutes, flipping halfway through, until golden and crispy.
- Serve warm.
Notes
- Use a clean kitchen towel to squeeze excess moisture from grated zucchini.
- For extra crispiness, spray bites lightly with oil before air frying.
- Store leftovers in an airtight container in the fridge for up to 3 days.
