Description
A delicious and easy-to-make casserole combining the flavors of street corn with tender chicken, cooked perfectly in an air fryer.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup corn kernels
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup crumbled cotija cheese
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp lime juice
- 2 tbsp chopped cilantro
Instructions
- Preheat your air fryer to 375°F (190°C).
- In a large bowl, mix shredded chicken, corn, mayonnaise, sour cream, cotija cheese, chili powder, smoked paprika, garlic powder, salt, black pepper, and lime juice.
- Transfer the mixture to an air fryer-safe baking dish.
- Place the dish in the air fryer and cook for 12-15 minutes, or until heated through and lightly browned on top.
- Remove from the air fryer and garnish with chopped cilantro.
- Serve warm.
Notes
- Use rotisserie chicken for quicker prep.
- Adjust spices to your taste.
- For extra crispiness, broil for 1-2 minutes after air frying.
