Description
A quick and flavorful meal combining air-fried street corn and chicken served over rice.
Ingredients
- 1 cup cooked rice
- 1 chicken breast, diced
- 1 cup corn kernels
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/4 cup crumbled cotija cheese
- 1 tbsp lime juice
- 2 tbsp chopped cilantro
- Salt and pepper to taste
Instructions
- Preheat air fryer to 375°F.
- Toss chicken and corn with olive oil, chili powder, garlic powder, salt, and pepper.
- Air fry chicken and corn for 12 minutes, shaking halfway.
- Serve over rice, topped with cotija cheese, lime juice, and cilantro.
