Description
A light and fresh pasta salad made with seasonal vegetables and cooked in an air fryer for a quick meal.
Ingredients
- 8 oz penne pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup black olives, sliced
- 1/4 cup feta cheese, crumbled
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions, then drain and let cool.
- Preheat the air fryer to 350°F (175°C).
- Toss the cherry tomatoes, cucumber, bell pepper, and red onion with 1 tbsp olive oil, salt, and pepper.
- Air fry the vegetables for 5 minutes, shaking halfway.
- In a large bowl, mix the cooked pasta, air-fried vegetables, olives, and feta cheese.
- Drizzle with remaining olive oil and lemon juice, then sprinkle with oregano.
- Toss well and serve chilled.
Notes
- Add grilled chicken for extra protein.
- Store leftovers in an airtight container for up to 2 days.
