Description

A light and fresh pasta salad made with seasonal vegetables and cooked in an air fryer for a quick meal.


Ingredients

  • 8 oz penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste


Instructions

  1. Cook the pasta according to package instructions, then drain and let cool.
  2. Preheat the air fryer to 350°F (175°C).
  3. Toss the cherry tomatoes, cucumber, bell pepper, and red onion with 1 tbsp olive oil, salt, and pepper.
  4. Air fry the vegetables for 5 minutes, shaking halfway.
  5. In a large bowl, mix the cooked pasta, air-fried vegetables, olives, and feta cheese.
  6. Drizzle with remaining olive oil and lemon juice, then sprinkle with oregano.
  7. Toss well and serve chilled.

Notes

  • Add grilled chicken for extra protein.
