Ingredients
- 1 medium sweet potato, sliced into 1/4-inch rounds
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup tomato sauce
- 1/2 cup shredded mozzarella cheese
- 1/4 cup sliced bell peppers
- 1/4 cup sliced mushrooms
- 1 tbsp chopped fresh basil
Instructions
- Preheat the air fryer to 375°F (190°C).
- Toss sweet potato slices with olive oil, salt, and black pepper.
- Arrange the slices in a single layer in the air fryer basket.
- Air fry for 10 minutes, flipping halfway, until tender and slightly crispy.
- Spread tomato sauce over each sweet potato slice.
- Sprinkle mozzarella cheese and add bell peppers and mushrooms.
- Air fry for another 5 minutes until the cheese melts.
- Garnish with fresh basil before serving.
