Description

Quick and easy air fryer tortilla pockets filled with beans and veggies for a healthy meal.


Ingredients

  • 4 whole wheat tortillas
  • 1 cup cooked black beans
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup shredded cheese
  • 1 tsp olive oil
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste


Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. In a bowl, mix beans, bell peppers, onions, cumin, garlic powder, salt, and pepper.
  3. Place a tortilla on a flat surface and spoon the mixture onto one half.
  4. Sprinkle cheese on top and fold the tortilla over.
  5. Brush the outside with olive oil.
  6. Air fry for 5-6 minutes, flipping halfway, until golden and crispy.
  7. Serve warm.
