Description
A creamy and hearty Tuscan white bean soup made easily in an air fryer. Packed with flavors of garlic, herbs, and tender beans for a comforting meal.
Ingredients
- 1 can (15 oz) white beans, drained and rinsed
- 1 cup vegetable broth
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1/2 tsp dried rosemary
- 1/2 tsp dried thyme
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1 tbsp olive oil
- 1/4 cup chopped kale
- 1 tbsp grated Parmesan cheese (optional)
Instructions
- Preheat your air fryer to 360°F (180°C) for 3 minutes.
- In a heat-safe bowl, mix beans, broth, onion, garlic, rosemary, thyme, pepper, salt, and olive oil.
- Place the bowl in the air fryer and cook for 15 minutes, stirring halfway.
- Add kale and cook for another 5 minutes.
- Serve hot, topped with Parmesan if desired.
Notes
- Use cannellini or navy beans for best results.
- Adjust salt to taste based on broth used.
- Add a splash of lemon juice for brightness if needed.
