Description

A nutritious and warming green juice soup made in an air fryer, perfect for winter wellness.


Ingredients

  • 2 cups spinach
  • 1 cup kale
  • 1 cucumber, chopped
  • 1 green apple, cored and chopped
  • 1 celery stalk, chopped
  • 1 inch ginger, peeled
  • 1 lemon, juiced
  • 2 cups vegetable broth
  • Salt and pepper to taste


Instructions

  1. Preheat your air fryer to 350°F (175°C).
  2. Add spinach, kale, cucumber, green apple, celery, and ginger to the air fryer basket.
  3. Air fry for 5 minutes to soften the greens.
  4. Transfer the softened greens to a blender.
  5. Add lemon juice and vegetable broth.
  6. Blend until smooth.
  7. Season with salt and pepper to taste.
  8. Serve warm.

Notes

  • Adjust the thickness by adding more or less vegetable broth.
  • For extra creaminess, add half an avocado before blending.
  • Store leftovers in an airtight container in the fridge for up to 2 days.
