Description
A nutritious and warming green juice soup made in an air fryer, perfect for winter wellness.
Ingredients
- 2 cups spinach
- 1 cup kale
- 1 cucumber, chopped
- 1 green apple, cored and chopped
- 1 celery stalk, chopped
- 1 inch ginger, peeled
- 1 lemon, juiced
- 2 cups vegetable broth
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 350°F (175°C).
- Add spinach, kale, cucumber, green apple, celery, and ginger to the air fryer basket.
- Air fry for 5 minutes to soften the greens.
- Transfer the softened greens to a blender.
- Add lemon juice and vegetable broth.
- Blend until smooth.
- Season with salt and pepper to taste.
- Serve warm.
Notes
- Adjust the thickness by adding more or less vegetable broth.
- For extra creaminess, add half an avocado before blending.
- Store leftovers in an airtight container in the fridge for up to 2 days.
