A hearty and comforting soup perfect for a snowy Christmas day, made easily in your air fryer.
Ingredients
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup frozen corn
- 1 cup frozen peas
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 350°F (175°C).
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Transfer the beef to the air fryer basket.
- Add onion, garlic, carrots, and celery to the air fryer basket.
- Pour in beef broth and diced tomatoes.
- Add corn, peas, thyme, and rosemary. Stir to combine.
- Cook in the air fryer for 20-25 minutes, stirring halfway through.
- Season with salt and pepper to taste before serving.
Notes
- For a thicker soup, add 1 tbsp of cornstarch mixed with water.
- You can substitute ground turkey for a lighter option.
- Serve with crusty bread for a complete meal.
