Description
A quick and flavorful gumbo-style soup made with andouille sausage and okra, cooked in an air fryer for convenience.
Ingredients
- 1 lb andouille sausage, sliced
- 2 cups okra, sliced
- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14 oz) diced tomatoes
- 1 tsp smoked paprika
- 1 tsp thyme
- 1 tsp cayenne pepper (optional)
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp cooking oil
- 2 tbsp flour
Instructions
- Preheat air fryer to 400°F (200°C).
- Toss okra with 1 tbsp oil and air fry for 8-10 minutes until slightly crispy.
- Remove okra and set aside.
- In a pot, heat remaining oil and brown sausage for 5 minutes.
- Add onion, bell pepper, celery, and garlic. Cook for 3 minutes.
- Sprinkle flour over mixture and stir well.
- Pour in chicken broth and diced tomatoes. Stir to combine.
- Add smoked paprika, thyme, cayenne, bay leaf, salt, and pepper.
- Simmer for 15 minutes.
- Add air-fried okra and cook for 5 more minutes.
- Remove bay leaf before serving.
Notes
- For extra thickness, mix 1 tbsp cornstarch with water and stir into soup.
- Serve with rice or crusty bread.
- Adjust cayenne for desired spice level.
