A festive twist on classic beef enchiladas, cooked in an air fryer for a crispy texture and quick preparation. Perfect for a Christmas meal.
Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup enchilada sauce
- 8 small flour tortillas
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 2 tbsp vegetable oil
Instructions
- Preheat your air fryer to 375°F (190°C).
- In a skillet, cook the ground beef with taco seasoning until browned. Drain excess fat.
- Add onions and bell peppers to the beef mixture and cook for 3 minutes.
- Spread enchilada sauce on each tortilla, then fill with the beef mixture and cheese.
- Roll the tortillas tightly and place them seam-side down in the air fryer basket.
- Brush the tops with vegetable oil.
- Air fry for 8-10 minutes until golden and crispy.
- Serve immediately with extra sauce and cheese if desired.
