Description
A hearty and flavorful soup made with black beans and sweet potatoes, cooked quickly in an air fryer for a festive Christmas meal.
Ingredients
- 1 can (15 oz) black beans, drained and rinsed
- 1 medium sweet potato, peeled and diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/4 tsp black pepper
- 2 cups vegetable broth
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Preheat the air fryer to 375°F (190°C).
- Toss sweet potatoes, onion, and garlic with olive oil, cumin, paprika, and black pepper.
- Transfer to the air fryer basket and cook for 15 minutes, shaking halfway.
- Add black beans and vegetable broth, then cook for another 10 minutes.
- Blend half the soup for a creamy texture if desired.
- Season with salt and garnish with fresh cilantro before serving.
Notes
- For extra spice, add a pinch of cayenne pepper.
- Store leftovers in an airtight container for up to 3 days.
- Serve with crusty bread or tortilla chips.
