Description
A hearty and flavorful pasta fagioli soup perfect for Christmas gatherings. Made easily in an air fryer or crockpot for convenience.
Ingredients
- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) cannellini beans, drained
- 4 cups beef broth
- 1 cup ditalini pasta
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Heat olive oil in the air fryer or crockpot.
- Brown the ground beef, then add onion, garlic, carrots, and celery.
- Cook until vegetables soften.
- Stir in diced tomatoes, beans, beef broth, oregano, and basil.
- Simmer for 20 minutes in the air fryer or 4 hours on low in the crockpot.
- Add pasta and cook until tender.
- Season with salt and pepper.
- Serve hot.
Notes
- For a vegetarian version, replace beef with mushrooms and use vegetable broth.
- Adjust pasta cooking time based on preference.
- Store leftovers in the fridge for up to 3 days.
