Description
A warm and comforting cabbage soup made in the air fryer, perfect for a Christmas dinner.
Ingredients
- 1 small cabbage, chopped
- 2 carrots, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tbsp olive oil
Instructions
- Preheat your air fryer to 360°F.
- Heat olive oil in a pan and sauté onion, garlic, and carrots for 5 minutes.
- Add chopped cabbage and cook for another 3 minutes.
- Transfer the mixture to an air fryer-safe pot or dish.
- Pour in vegetable broth and diced tomatoes.
- Season with salt, pepper, and thyme.
- Cover and air fry for 20 minutes, stirring once halfway.
- Serve hot.
Notes
- You can add potatoes or beans for extra heartiness.
- Adjust seasoning to taste.
- Store leftovers in the fridge for up to 3 days.
