A simple and flavorful dish featuring juicy pork chops and roasted root vegetables cooked in an air fryer, perfect for a festive Christmas meal.
Ingredients
- 4 pork chops (about 1 inch thick)
- 2 large carrots, peeled and chopped
- 2 medium parsnips, peeled and chopped
- 1 large sweet potato, peeled and cubed
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1 tsp paprika
Instructions
- Preheat your air fryer to 400°F (200°C).
- Toss the chopped root vegetables with olive oil, salt, pepper, garlic powder, and thyme.
- Place the vegetables in the air fryer basket in a single layer. Cook for 15 minutes, shaking halfway.
- Season the pork chops with salt, pepper, and paprika.
- Push the vegetables to one side and add the pork chops to the air fryer. Cook for 10 minutes, flipping halfway.
- Check the internal temperature of the pork chops (145°F / 63°C). If needed, cook for 2-3 more minutes.
- Serve the pork chops with the roasted vegetables.
Notes
- Adjust seasoning to your taste.
- Make sure not to overcrowd the air fryer for even cooking.
- Let the pork chops rest for 3 minutes before serving.
