Description
A rich and flavorful roasted tomato soup made easily in your air fryer, perfect for warming up during Christmas.
Ingredients
- 6 large tomatoes, halved
- 1 onion, quartered
- 4 garlic cloves, peeled
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried basil
- 1 tsp dried oregano
- 2 cups vegetable broth
- 1/2 cup heavy cream (optional)
Instructions
- Preheat your air fryer to 375°F (190°C).
- Toss tomatoes, onion, and garlic with olive oil, salt, pepper, basil, and oregano.
- Place in the air fryer basket and roast for 15-20 minutes until softened and slightly charred.
- Transfer the roasted vegetables to a blender or pot, add vegetable broth, and blend until smooth.
- Pour into a saucepan, stir in heavy cream (if using), and heat gently for 5 minutes.
- Serve hot with crusty bread or croutons.
Notes
- For a creamier texture, blend longer or pass through a sieve.
- Adjust seasoning to taste before serving.
- Store leftovers in an airtight container for up to 3 days.
