Description
A quick and easy shrimp fried rice bake made in the air fryer, perfect for Christmas gatherings.
Ingredients
- 1 cup cooked rice
- 1/2 lb shrimp, peeled and deveined
- 1/2 cup mixed vegetables (peas, carrots, corn)
- 1 egg, beaten
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 clove garlic, minced
- 1/2 tsp ginger, grated
- 1 tbsp green onions, chopped
- 1 tbsp vegetable oil
Instructions
- Preheat air fryer to 375°F (190°C).
- Heat vegetable oil in a pan over medium heat. Add garlic and ginger, sauté for 30 seconds.
- Add shrimp and cook until pink, about 2 minutes per side. Remove and set aside.
- In the same pan, scramble the egg, then add mixed vegetables and cook for 2 minutes.
- Add cooked rice, soy sauce, and sesame oil. Stir well.
- Transfer mixture to an air fryer-safe dish. Top with cooked shrimp.
- Air fry for 8-10 minutes until heated through.
- Garnish with green onions before serving.
Notes
- Use day-old rice for best texture.
- Adjust soy sauce to taste.
- Add chili flakes for extra heat.
