Description

A quick and easy shrimp fried rice bake made in the air fryer, perfect for Christmas gatherings.


Ingredients

  • 1 cup cooked rice
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 cup mixed vegetables (peas, carrots, corn)
  • 1 egg, beaten
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 clove garlic, minced
  • 1/2 tsp ginger, grated
  • 1 tbsp green onions, chopped
  • 1 tbsp vegetable oil


Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. Heat vegetable oil in a pan over medium heat. Add garlic and ginger, sauté for 30 seconds.
  3. Add shrimp and cook until pink, about 2 minutes per side. Remove and set aside.
  4. In the same pan, scramble the egg, then add mixed vegetables and cook for 2 minutes.
  5. Add cooked rice, soy sauce, and sesame oil. Stir well.
  6. Transfer mixture to an air fryer-safe dish. Top with cooked shrimp.
  7. Air fry for 8-10 minutes until heated through.
  8. Garnish with green onions before serving.

Notes

  • Use day-old rice for best texture.
  • Adjust soy sauce to taste.
  • Add chili flakes for extra heat.
