Description
A creamy and festive soup made with shrimp and spinach, perfect for Christmas dinner. Prepared quickly in an air fryer.
Ingredients
- 1 lb shrimp, peeled and deveined
- 4 cups fresh spinach
- 2 cups heavy cream
- 1 cup chicken broth
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp nutmeg
Instructions
- Preheat the air fryer to 350°F.
- In a bowl, toss shrimp with salt, pepper, and minced garlic.
- Air fry the shrimp for 5 minutes until pink.
- In a pot, melt butter and sauté onions until soft.
- Add spinach and cook until wilted.
- Pour in heavy cream and chicken broth, stir well.
- Add nutmeg and bring to a simmer.
- Mix in cooked shrimp and serve hot.

- Use fresh spinach for best texture.
- Adjust salt and pepper to taste.
