Description
Soft and chewy cookies inspired by the flavors of cinnamon rolls, complete with a sweet cinnamon filling.
Ingredients
- 2 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 cup packed brown sugar
- 1 large egg
- 2 tsp vanilla extract
- 1/2 cup cinnamon filling (mix 1/4 cup brown sugar, 1 tbsp cinnamon, 1 tbsp melted butter)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk flour and baking soda. Set aside.
- Cream butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in egg and vanilla until combined.
- Gradually mix in the flour mixture until dough forms.
- Roll dough into balls, flatten slightly, and add 1 tsp cinnamon filling in the center. Fold dough over and seal.
- Place cookies on baking sheets, spacing 2 inches apart.
- Bake for 10-12 minutes or until edges are golden.
- Cool on baking sheets for 5 minutes before transferring to a wire rack.
Notes
- Store in an airtight container for up to 5 days.
- For extra flavor, drizzle with cream cheese glaze after cooling.
- Use room-temperature butter for best results.
