Ingredients
- 4 large spinach tortillas
- 1 cup shredded carrots
- 1 cup sliced bell peppers
- 1 cup chopped mushrooms
- 1/2 cup diced red onion
- 1/2 cup crumbled feta cheese
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat air fryer to 375°F (190°C)
- Mix all vegetables in a bowl with olive oil and seasonings
- Divide mixture evenly among tortillas
- Sprinkle cheese over filling
- Roll tortillas tightly and secure with toothpicks
- Air fry for 8-10 minutes until golden brown
- Flip halfway through cooking
- Remove toothpicks before serving
