Description

Fresh summer rolls made in an air fryer for a crispy texture.


Ingredients

  • 8 rice paper wrappers
  • 1 cup cooked shrimp, peeled and deveined
  • 1 cup shredded carrots
  • 1 cup cucumber, julienned
  • 1 cup lettuce, thinly sliced
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro
  • 2 tbsp hoisin sauce
  • 1 tbsp soy sauce
  • 1 tsp sesame oil


Instructions

  1. Soak rice paper wrappers in warm water for 10 seconds.
  2. Lay wrapper flat and add shrimp, carrots, cucumber, lettuce, mint, and cilantro.
  3. Fold sides inward and roll tightly.
  4. Preheat air fryer to 375°F.
  5. Lightly spray rolls with oil.
  6. Air fry for 5 minutes, flipping halfway.
  7. Mix hoisin sauce, soy sauce, and sesame oil for dipping.

Notes

  • Keep rice paper damp to prevent cracking.
  • Adjust fillings to your preference.
